Ingredients for Sugar-Free Cashew Katli
Cashews – 1 cup (150 grams)
Dates (pitted) – 10 to 12
Cardamom powder – 1/4 teaspoon
Ghee – 1 teaspoon
Silver foil
Method of Preparation
To make sugar-free cashew katli, first grind the cashews finely in a mixer. Be careful not to over-mix and release the oil. You just want to grind them finely, not extract the oil from the cashews.
While grinding, soak the dates in hot water for 10 minutes. Once they soften, blend them in a mixer to form a paste. After grinding both ingredients, add the date paste to a nonstick pan and fry over low heat for 2-3 minutes.
Now add the cashew powder and cook, stirring constantly, until it thickens. When the mixture begins to leave the pan, add cardamom powder and turn off the heat. Pour the mixture onto a greased plate or butter paper and lightly roll it out with a rolling pin. Finally, once cool, cut it into desired diamond shapes. If desired, you can add silver foil on top.

Important Tips
Keep in mind that the sweetness of the dates is enough to sweeten the taste of the cashew katli, so there's no need to add any additional sweeteners. You can also use stevia or date sugar if you prefer.
