Cooking up a batch of warm, gooey chocolate brownies has never been easier thanks to this simple air fryer recipe.
Brownies are the perfect dessert or go-to (occasional) snack. However, they can take forever to make in the oven. But they don't need hours of slaving in the kitchen thanks to this shared by the head chef of, Stefano, via the .
Food writer and author Katie Caldesi wrote: “They are full of fibre from the nuts, chocolate and dates. Toasting nuts brings out the natural oils and gives them oodles of flavour. Smell as they go into the air fryer and come out, and you will see what I mean. If you are keeping your carbs very low, use erythritol instead of dates.”
They’re also low in sugar, while still keeping the delicious and spongy texture. What a treat! Six ingredients, one air fryer and half an hour.

Ingredients:
- 75g walnuts
- Three fat Medjool dates (approx 75g), pitted and chopped OR 75g erythritol
- 100g dark chocolate (at least 85% cocoa solids)
- 60g butter, plus some extra for greasing
- Three eggs
- 50g ground almonds
Step-by-step instructions:
- For three minutes, toast the walnuts on a crisper in the drawer at 160C. Then, let them cool before chopping them.
- If you decide to use dates, soak them in 75ml of boiled water for a few minutes, and mash them with a fork. Alternatively, if using erythritol, dissolve them in 50ml of boiled water in a small saucepan on medium-high heat and set aside.
- Once done, put the baking paper liner into a silicone mould. Melt the chocolate and the butter together in a metal bowl over hot water in a saucepan over medium heat.

- Separate eggs into two different bowls, add the date or the erythritol mixture to the egg yolks and mix using a whisk. Add the chocolate mixture to the yolk mixture, along with the walnuts and ground almonds. Mix everything.
- Whisk the egg whites and with a large metal spoon, fold the egg whites into the chocolate mixture. Once done, pour it into the prepared liner.
- Finally, let it bake in the air fryer for 20 to 25 minutes at 140C. When cooked, remove it from the air fryer and let it cool at room temperature before cutting into 12 squares - and the best part, enjoy it.
